    If you eagerly await the oh-so-fleeting rhubarb season every spring, you’re going to love this recipe for rhubarb sauce. It’s a deliciously easy way to concentrate rhubarb’s puckery-sweet flavor so you can add a bit of zing to just about everything. While I tend to lean into sweet flavor profiles like classic strawberry rhubarb crisp, this versatile sauce can also go savory.

    I suppose it’s not surprising that a vegetable that eats like a fruit would be so amiable to other flavors, but I was quite impressed when I first started experimenting. It’s a lovely addition to my strawberry vinaigrette, is excellent with grilled chicken and pork (almost like a rhubarb bbq sauce!), and is equally yummy on an ice cream sundae.  

    Best of all, this zippy rhubarb sauce is a perfect candidate for canning so you can enjoy bright, sunshiney flavor all year round. So, next time you pass a pile of those vibrant pink stalks at the store, make sure you take full advantage and make a batch (or 5). I promise you won’t regret it!

    This rhubarb sauce is a beautiful balance of bright, tangy, and softly sweet—like springtime in a spoon. The rhubarb itself brings its signature lip-puckering tartness, but as it cooks down, it transforms into something silky and jammy, with a vibrant, almost jewel-toned color.

    The sugar mellows out the sharpness just enough, creating a sweet-tart harmony while fresh orange juice adds a subtle citrusy brightness. Then there’s the vanilla—soft, warm, and a little floral—which rounds everything out and adds a cozy, almost dessert-like finish. The end result is smooth, glossy, and spoonable, with a flavor that’s equal parts tart, sweet, and aromatic. YUM!

    Why You’ll Love This Recipe For Rhubarb Sauce

    • Just 5 Ingredients – And one of them is water! The way I see it, a short ingredient list means a lack of obstacles for making something delicious.
    • Superbly Seasonal – Usually, rhubarb is only available for a few short months in the spring. That means you have to snatch it up while you can! (Consider it the warmer weather version of fresh cranberries.) And, with such an unmistakable rhubarb flavor, this tongue-ticklingly-tart sauce is sure to add a little spring to any dish’s step.
    • Quick & Easy – Chop your rhubarb, toss it in a pot with orange juice and water to simmer for 15 minutes, then blitz. All in, the entire process takes no more than 20 minutes—almost as easy as my berry chia seed jam.

    Ingredients Needed

    • Rhubarb – The redder, the better! Well, at least for visual purposes—there’s no scientific consensus that red stalks are sweeter. Green stalks work too, but the color can get a little muddy-looking. Just don’t eat the leaves if they’re still attached—they’re toxic!
    • Granulated Sugar – Plain white sugar has no flavor other than sweetness, ensuring the zippy tartness of rhubarb and citrus can shine.
    • Fresh Orange Juice – Fresh really is best when it comes to citrus juice, but you’re welcome to use bottled juices that are squeezed fresh (not from concentrate) if needed.
    • Water – If possible, start with filtered water for the best taste.
    • Vanilla Extract – Just a smidge of vanilla is all it takes to add warmth and depth to our sauce.

    Substitutions

    • Granulated Sugar – For a less processed option, use pure cane sugar. Note that superfine/caster sugar is also a perfect 1:1 swap with granulated; it’s the same, just with smaller granules.
    • Fresh Orange Juice – Other sweet tart juices (e.g. pineapple juice or cranberry juice cocktail) can work if needed.
    • Vanilla Extract – Feel free to swap in an equal amount of vanilla paste or use the scraped seeds of a vanilla pod. You can also skip the vanilla if you prefer. 

    How To Make Rhubarb Sauce

    Step 1: Heat. Add the chopped rhubarb, sugar, orange juice, and water to a large saucepan. Place the pan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to dissolve the sugar.

    Step 2: Simmer. Once simmering, let the rhubarb cook for 10-15 minutes, until it has completely softened and can be easily mashed with a spoon. The rhubarb should break down into a thick, saucy consistency.

    Step 3: Blend. Remove the saucepan from the heat and stir in the vanilla extract. Then, carefully use an immersion blender to puree the rhubarb sauce until it’s smooth and creamy. Be cautious, as the sauce will be very hot.

    Step 4: Cool & Store. Allow the rhubarb sauce to cool completely before serving (unless using it in a hot application like glazing a ham). Once at room temperature, you can transfer it to an airtight container and store it in the refrigerator for up to 5 days. For longer-term storage, the sauce can be frozen for up to 3 months.

    Optional Variations & Dietary Adjustments

    • Adjust the Sweetness: Use ½ cup of sugar for a tart sauce, or use ¾ cup for a sweeter sauce.
    • Strawberry-Rhubarb Sauce: For a classic springtime flavor pairing, add 1 cup of chopped fresh strawberries to the saucepan along with the rhubarb. The sweetness of the strawberries will nicely complement the tartness of the rhubarb.
    • Spiced Rhubarb Sauce: Add ½  teaspoon each of ground cinnamon, ginger, and cardamom for a cozy, aromatic sauce that’s delicious over oatmeal or swirled into yogurt parfaits.
    • Boozy Rhubarb Sauce: For an adults-only version, stir in 2-3 tablespoons of brandy, dark rum, or Cointreau after blending the sauce. The alcohol will add a lovely depth of flavor that’s excellent in both sweet and savory applications.
    • Rhubarb-Orange Compote: Replace the water with extra orange juice and add the zest of one orange for a more pronounced citrus flavor. Perfect for topping lemon pound cake or stirring into Greek yogurt.
    • Savory Rhubarb Chutney: Take the sauce in a savory direction by sautéing some minced shallot or onion before adding the rhubarb. Stir in a tablespoon of Dijon mustard, a pinch of red pepper flakes, and a splash of apple cider vinegar for a tangy chutney-style condiment that’s excellent with a variety of meats and sandwiches.

    The possibilities are endless when it comes to showcasing this versatile rhubarb sauce. Its bright, bold flavor profile complements both sweet and savory dishes, making it a must-have condiment for spring and summer entertaining.

    For a classic springtime dessert, spoon the rhubarb sauce over vanilla ice cream or frozen yogurt, perhaps with some fresh strawberries and a dollop of whipped cream. You can also swirl rhubarb sauce into plain Greek yogurt for a healthy breakfast or snack, topped with a sprinkle of my quinoa crunch granola for texture.

    • Choose the Right Rhubarb. Look for firm, crisp rhubarb stalks that are a vibrant red-pink color. Avoid any rhubarb that is limp, bruised, or has a greenish hue, as it may be past its prime. Younger, smaller rhubarb stalks will have a sweeter, more tender texture.
    • Customize the Spices. While the vanilla extract adds a lovely background flavor, you can experiment with other warming spices like cinnamon, ginger, or cardamom. Start with small amounts and adjust to your taste.
    • Blend to the Right Consistency. Use an immersion blender to puree the rhubarb sauce until it reaches your desired consistency. For a chunkier texture, you can leave some small pieces of rhubarb intact. For a silky smooth sauce, blend it until completely smooth.
    • Freeze for Later. This rhubarb sauce freezes beautifully, so consider doubling the batch and stashing some in the freezer. It will keep for up to 3 months, making it easy to enjoy the flavors of spring all year round.

    Storage Directions

    • Refrigeration: Once the rhubarb sauce has cooled completely, transfer it to an airtight container and store it in the refrigerator for up to 5 days. The sauce will thicken up as it chills, but you can give it a quick stir before using.
    • Freezing: For longer-term storage, the rhubarb sauce can be frozen for up to 3 months. Allow the sauce to cool completely, then pour it into freezer-safe containers or resealable plastic bags, leaving about ½ inch of headspace to allow for expansion. 
    • Reheating: When ready to use the frozen sauce, thaw it in the refrigerator overnight. You can also reheat it directly from frozen—just transfer the sauce to a saucepan and heat it over medium, stirring occasionally, until it’s warmed through.
    • Tip: Consider portioning the rhubarb sauce into individual servings or small batches before freezing. That way you can thaw just what you need at a time, without having to defrost the entire batch.

    Homemade Orange Rhubarb Sauce Nutrition

    This rhubarb sauce is light, simple, and a great way to add a pop of flavor and antioxidants to whatever you’re eating. Each serving comes in at just 80 calories, making it an easy addition to everything from yogurt bowls to desserts without significantly increasing the overall calorie count.

    The 20 grams of carbohydrates primarily come from the added sugar and the natural sugars in the rhubarb and orange juice. If you’d like to cut back, consider using less sugar or swapping in a cup-for-cup alternative for some or all of the granulated sugar. While it doesn’t provide protein or fat, the sauce is naturally fat-free and very easy to digest.
