Ingredients
4cupschopped rhubarb(the more red, the better!)
½ - ¾cupsgranulated sugar(use ½ cup for a tart sauce, ¾ for a sweeter sauce)
¼cupfresh orange juice
¼cupwater
1tspvanilla extract
Instructions
Add the rhubarb, sugar, orange juice, and water to a large saucepan and heat to a simmer while stirring. Once simmering, allow to simmer for 10-15 minutes, until the rhubarb completely softens and is easily mashed.
Remove from heat and stir in the vanilla extract. Use an immersion blender (careful, it'll be hot!) to blend the sauce until smooth.
Allow to cool completely before serving! Store in the fridge for up to 5 days or in the freezer for up to 3 months!
