If you’ve been following my blog, you’ll notice I use coconut pretty frequently. It’s delicious, it’s fatty, and I love it. So naturally, my first attempt at a fat bomb recipe HAD to include coconut.
What is a fat bomb you may ask?
In short, it’s pretty much a ball of calories. Traditionally it’s carb-free and used in the keto diet a lot to add fat into the diet.
But, my recipe is a little different. I’m a nursing mama, so I designed my coconut cream fat bombs to have fats and carbs to help me keep producing milk for my little lady.

As a nursing mom, I’ve been trying to add more healthy fats into my diet. I’ve been really intentional about adding olive oil, avocados, and coconut oil into my diet every day to keep up my milk production. I honestly don’t know if I would have made it this far nursing (8 months and going strong!) without being so intentional.
If you’re a nursing mama too, you have to make sure you’re getting enough calories and fat into your diet! I’ve found that if you restrict your calories while nursing your baby, your milk production TANKS. At least, that’s what happened to me a few months ago.

So I decided I better just settle down and learn to be okay with the season of my life that is eating more and feeding my baby.
I know carving out time to actually eat really sucks when you have children, and that’s why these coconut cream fat bombs come in handy! They’re a perfect high-calorie snack to grab when you’re busy. Just stick them in the fridge or freezer!

Finding Coconut Cream
Coconut cream can be tough to find in stores, so I order mine from Amazon! This is one that I like to use, it has great coconut flavor and is smoother than others I’ve tried in the past:
Trader Joe’s sells a good one too, but if you don’t live near a TJ’s, Amazon is so much easier!
Note: These are not for “dieting”. They will definitely make you feel full, but they probably won’t help you lose weight.

Coat them in sugar free chocolate.
I used 2/3 cup keto friendly chocolate chips with 2 tbsp coconut oil. Tastes like Bounty bars.

Megan Byrd, RD says

Hi I love this recipe! I was just wondering, are there too many carbs in this for the keto diet? Because I am doing keto and I feel like these would actually be keto.
Megan Byrd, RD says
Hi Alex!
Yes I think these would be considered keto. They’re very low carb, even though they have a little bit of sugar in them. Thanks for the great feedback! 🙂
