Balsamic Marinated Chicken w/Rosemary & Honey

This balsamic marinated chicken recipe uses honey, garlic, balsamic vinegar, and rosemary to make a super healthy chicken dinner. Great for the grill, too!

There’s something so delicious and comforting when you make a delicious fused with your favorite flavors. It’s even better when it’s an easy recipe.

This balsamic chicken is marinated to perfection, and is a simple recipe your whole family will love.

    You can slice it up and pair it with one of my zero prep vegetable side dishes, or shred it up and use it on a salad or in a mozzarella/basil caprese quesadilla. I’ve done both and they’re so good.

    If you’re wanting to make this a weekly meal prep recipe, I would double this recipe at least.

    Freezer Friendly

    I’ve been really into freezer meals lately. They work so well when you’re a busy mom who doesn’t have a lot of time to be in the kitchen cooking.

    This balsamic rosemary chicken recipe can simply be thrown into a gallon sized freezer zip lock and frozen for up to 3 months.

    Simply thaw overnight, then cook it up! So easy!

    Budget Friendly

    Although this recipe does not make a complete meal, it’s still very cheap at $.99 per serving.

    Add some vegetables and brown rice to your plate and it will be a complete meal. And I doubt you’d go above $2/serving adding sides to this recipe because it starts out so cheap already!

    Healthy Balsamic Marinated Chicken

    Many of the recipes for marinated chicken out there call for brown sugar or other refined sugars. What sets this recipe apart from others that I’ve come across is that it uses no refined sugars or artificial ingredients.

    This is a simple chicken recipe with only 6 ingredients for the marinade, and consists of whole, natural ingredients.


    A Side Note: If you have a baby under 1 that’s going to be eating this, eliminate the honey altogether.

    You can also marinate the chicken without the honey, cook a piece of the chicken without the honey for your baby,  and then add the honey to the skillet while cooking the rest of the chicken.

    Balsamic Marinated Chicken w/Rosemary & Honey

    This balsamic marinated chicken recipe uses honey, garlic, balsamic vinegar, and rosemary to make a super healthy chicken dinner. Great for the grill, too!

    Ingredients

    Balsamic Marinade:

    • 1/2 cup balsamic vinegar
    • 1/4 cup fresh rosemary chopped
    • 3 cloves garlic minced
    • 2 tbsp honey
    • 1/2 tsp onion powder
    • 4 boneless, skinless chicken breasts
    • 1 tsp avocado or olive oil

    Instructions

    • Mix the first 5 ingredients in a medium bowl or gallon sized zip lock bag.
    • Place chicken into the mixture, tossing the chicken until it is completely covered with the marinade. Place in the fridge for 4-8 hours to marinate.
    • After 4-8 hours of marinating, heat a skillet or grill pan to medium heat with 1 tsp oil.
    • Add chicken to the skillet/grill pan. Cook on one side for about 5 minutes. Flip the chicken and cook the other side for about 5 minutes.
    • Turn off the heat, and allow the chicken to rest in the hot pan for 5 minutes.
    • Serve with broccoli, asparagus, or a side salad!

    To Make It A Freezer Meal:

    • Mix the first 5 ingredients in a gallon sized zip lock bag.
    • Place chicken into the mixture, tossing the chicken until it is completely covered with the marinade.
    • Label and date the bag, and freeze for up to 3 months.
    • Thaw overnight before cooking.
    • Heat a skillet or grill pan to medium heat with 1 tsp oil.
    • Add chicken to the skillet/grill pan. Cook on one side for about 5 minutes. Flip the chicken and cook the other side for about 5 minutes.
    • Turn off the heat, and allow the chicken to rest in the hot pan for 5 minutes.
    • Serve with broccoli, asparagus, or a side salad!

        Is the chicken not enough protein? I would suggest adding a vegetable and a carbohydrate to make this a complete meal! 🙂
