    With Easter right around the corner, bunnies and carrots have been on the top of my mind—maybe I’ve been reading too much Peter Rabbit to my youngest?!? Anyway, I’m glad my brain has been obsessing, because these brown sugar honey glazed carrots are right in time for spring!

    They’re light and lovely, perfect for pairing with holiday favorites like my double smoked ham and slow cooker rump roast. Plus, they’re a snap to make and are the kind of side dish that works all year round! Honestly, I have a feeling these sweet glazed carrots will also be showing up on my Thanksgiving and Christmas tables—they’re that good.

    But, despite being yummy and pretty enough to serve at special occasions, these little beauties are easy enough to bust out on a random weeknight as an easy veggie side. In fact, my kindergartener has been requesting them on repeat lately, and I’ve been happy to oblige. Any veggies that my kids like are veggies that I love!

    Ingredients Needed

    • Honey – The sticky-sweet floral heart of our recipe. If possible, try experimenting with local honey varieties to find your favorite. Sure, clover honey is always great. That said, you can get more complex flavors from wildflower, acacia, orange blossom, or sourwood honey.
    • Avocado Oil, Unsalted Butter & Salt – Using both oil and butter ensures the best of all worlds—richness, heat preparedness, and heart healthiness. If possible, try to reach for grass-fed organic butter for the healthiest nutrient profile. 
    • Brown Sugar – When combined with honey, it helps create a delectably caramelized glaze. Feel free to use either light or dark brown sugar here depending on how much molasses undertone you prefer.
    • Fresh Lemon Juice – “Fresh” is the operative word, as bottled lemon juice can taste bitter and flat.
    • Carrots – If possible, try to get the pretty kind with their root ends still attached. They’re a bit more expensive, but the visual impact is worth it for holidays and special occasions. Any color works! 
    • Fresh Thyme Leaves – Minty, lemony, woodsy thyme offers a light herbal profile that plays nicely with the sweet honey-brown sugar duo. 
    • Salt & Black Pepper – Just the basics! Try to reach for fine sea salt or kosher salt and freshly cracked black pepper for the best results.

    Substitutions

    • Honey – Maple syrup or agave nectar work too, though they don’t have the same floral brightness. That said, maple is particularly great for a fall/winter version of the recipe!
    • Unsalted Butter & Salt – Salted butter works if that’s what you have on hand. Just wait to add any extra salt until after roasting to ensure you don’t overdo it.
    • Avocado Oil – Olive oil works if you don’t mind imparting a bit more savory flavor. You can also use relatively heart-healthy canola oil instead.
    • Brown Sugar – Make your own by mixing granulated sugar and unsulphured molasses in a 1 cup to 1-2 tablespoon ratio (depending on whether you want light or dark). Alternatively, swap in a less-refined version like muscovado sugar or grated piloncillo. 
    • Carrots – Feel free to swap in baby carrots if you don’t want to do any prep work. You can also use parsnips, which are cream colored, slightly sweeter than carrots, and have a faint anise flavor. 
    • Fresh Thyme Leaves – If you only have dried thyme, use 3x as much. 

    How To Make Glazed Carrots with Brown Sugar & Honey

    Step 1: Prep & Make the Glaze. Preheat your oven to 400°F and line a baking sheet with parchment paper for easy cleanup. Add the honey, butter, oil, brown sugar, lemon juice, salt, and pepper to a small saucepan. Heat over low, stirring occasionally, until everything is melted and well combined. Remove from heat and let it cool slightly.

    Step 2: Prep the Carrots. Peel the carrots and place them on the prepared baking sheet. If any carrots are thicker than about 2 inches, slice them into smaller sticks so they cook evenly.

    Step 3: Coat & Arrange. Pour the glaze over the carrots and toss until evenly coated. Spread them out into a single layer, then sprinkle with fresh thyme.

    Step 4: Roast Until Tender. Bake for 25–30 minutes, or until the carrots are fork-tender and lightly browned around the edges. Transfer the warm carrots to a serving platter and finish with an extra sprinkle of thyme and/or a drizzle of honey. Serve immediately. Enjoy!

To freeze, let the carrots cool completely, then transfer them to a freezer-safe container or bag. For best results, freeze in a single layer first, then consolidate once solid. They’ll keep well for up to 2–3 months. When ready to use, thaw in the refrigerator overnight. 
    • Reheating: For the best results, you can reheat them in a 350°F oven for 8–10 minutes to help bring back some of that roasted texture. Alternatively, warm them in a skillet over medium heat for a few minutes, stirring occasionally, until heated through. You can also reheat them in the microwave in 30-second intervals, though the glaze may become slightly softer.     Ingredients

    Honey Brown Sugar Glaze:

    • 3 tbsp honey
    • 2 tbsp unsalted butter
