    Roasted Buffalo Cauliflower Bites

    Next time you’re craving wings and veggies at the same time, you should try making my Roasted Buffalo Cauliflower Hot Wings! Crispy bites of nutty-sweet cauliflower are tossed in a classic buttery hot sauce for a fantastic snack that satisfies both your healthy food and “cheat day” food cravings.

    Football season (a.k.a. snacking season) is upon us. Whether we’re hosting or potluck guests, nearly every cold weather Sunday is a game day gathering. Mixing in some low-cal veggie-packed recipes like cauliflower buffalo wings and restaurant-style salsa among treats like fall chex mix and pumpkin protein fluff ensures that my day of grazing stays pretty balanced. 

    And for all the readers out there who are certain their fellas won’t want anything to do with something called “buffalo cauliflower wings,” I beg to differ. Case in point: my weight-lifting, 4-wheel riding, football-loving fireman husband is obsessed. It’s not hard to see why—they’re friggin’ delicious. And while they taste naughty, they’re anything but!

    As if that weren’t enough to make you swoon, brace yourselves—it gets even better. Cauliflower is WAY cheaper than chicken (hooray for saving money!), each serving is less than 120 calories (meaning seconds and thirds are totally doable, even on a diet), and these veggie “wings” are a snap to make with only 7 ingredients and 10 minutes of effort.

Cornstarch-coating the cauliflower before roasting creates a delightfully crisp exterior, mimicking the crackly skin on fried chicken wings. And the sauce? It is literally the same as what you’d use on poultry. Frank’s Red Hot, butter, and a few seasonings are all you need.

    Each bite is balanced by tangy heat, savory richness, and just the right amount of zing that makes traditional wings so finger-lickin’ good. They’re crispy on the outside, juicy on the inside, and every bit as crave-worthy as the real deal! Seriously, friend—if you or anyone you know likes buffalo wings, you have to try these easy buffalo cauliflower bites.

Cauliflower is naturally low in calories and high in fiber, vitamins, and antioxidants, so you’re getting a nutrient boost with every bite. 
    • Crowd-Pleasing – Every time I make a batch, these buffalo cauliflower wings disappear fast. They deliver all the spicy, tangy, buttery flavor people expect from wings, but with a lighter, veggie-forward twist. They’re appealing to both meat-lovers and plant-based eaters alike! They’re also naturally gluten-free, nut-free, and seed-free, and they’re easy to make dairy-free (vegan), corn-free, and allium free with simple tweaks.

    Ingredients Needed

    • Cauliflower Florets – Feel free to buy them pre-cut, or opt for a whole head and break it down yourself. You can also roast frozen cauliflower, so pick whatever option is cheapest and works best for you!
    • Avocado Oil – My go-to neutral oil is perfect for high-heat roasting to get wing-like results, plus it is one of the healthiest oils you can choose!
    • Cornstarch – Adding extra starch helps crisp up the exterior.
    • Garlic Powder & Onion Powder – These pantry staples add the sweetly complex flavor of cooked alliums without any fuss.
    • Buffalo Sauce – I’m a Frank’s girl, but you’re welcome to use other brands like Sweet Baby Ray’s or Primal Kitchen.
    • Unsalted Butter – I find the buffalo sauce is plenty salty, so I use unsalted butter to add the customary richness to the sauce.

    Substitutions

    • Cauliflower Florets – Feel free to swap in lime green romanesco, or use cheerfully hued orange or purple cauliflower. P.S. The bright colors pique my kiddos’ interest—a neat trick for parents who want their young ones to eat more veggies.
    • Avocado Oil – Canola oil is also quite heart healthy and is typically a more budget-friendly option.
    • Cornstarch – Potato starch is a perfect 1:1 swap for cornstarch in every recipe I have made. And, while I haven’t personally tried it, apparently arrowroot starch/flour and rice flour can also be used.
    • Garlic Powder & Onion Powder – Feel free to swap in the seasonings of your choice. Paprika is always popular!
    • Buffalo Sauce – Hot sauce, like Crystal or Tabasco, is usually thinner with a sharper vinegar kick and pure chili heat. Buffalo sauce, on the other hand, is more viscous with a milder heat. That said, you can absolutely use your preferred hot sauce—naturally thicker options like Cholula work especially well IMO.
    • Unsalted Butter – Vegan butter (preferably unsalted) is a 1:1 swap. You can also add richness with coconut oil, but be sure to reach for refined oil to prevent coconut flavor from coming through.

    How To Make Roasted Buffalo Cauliflower Wings

    Step 1: Toss the cauliflower bites with the oil, cornstarch and seasonings. I like to get in there with my hands to make sure every piece gets some flavor love. P.S. No need to wash the bowl yet—we’ll use it again in a bit.

    Step 2: Bake. Spread the coated cauliflower across a parchment-lined sheet pan (for easy cleanup) in a single layer. Make sure to leave a bit of room between pieces so they crisp up rather than steam.

    Step 3: Make the Wing Sauce. Mix the buffalo sauce and butter in the bowl from step 1, whisking well to combine. Step 4: Toss the baked crispy cauliflower bites with the wing sauce, coating them evenly. Spread the bites back on the sheet pan and rebake to get the perfect consistency. Serve with Greek yogurt ranch and watch as your friends and family devour the plate before your eyes!

    Optional Variations & Dietary Adjustments

    • Vegan Cauliflower Wings – Replace the butter in the buffalo sauce with vegan butter or even olive oil for a plant-based version that tastes just as good.
    • Allium-Free – Skip the onion and garlic powder in favor of a few pinches of asafoetida (a.k.a. hing).
    • Different Sauces – Not a fan of buffalo? Swap in whatever you’d order at the pub. BBQ sauce, teriyaki glaze, or even a garlic-Parmesan butter for a totally different flavor profile. Honey mustard or sweet chili sauce also make fun twists.
    • Adjust the Spice – Add a pinch of cayenne or red pepper flakes to the seasoning mix for extra heat, or stick with a mild buffalo sauce if you prefer less spice.

    Serving Suggestions

    Buffalo cauliflower wings are a natural fit for game days and parties—pile them high on a platter with celery sticks and ranch, spicy ranch, or blue cheese dressing for a classic sports-bar feel. They’re perfect finger food for sharing, and you can easily double (or triple!) the batch if you’re hosting a crowd.

    If you’d like to turn them into more of a meal, serve the wings alongside hearty sides like sweet potato fries, roasted vegetables, or a big green salad. They’re also great tucked into wraps with lettuce and avocado, or piled into grain bowls with rice or quinoa for a filling, plant-based dinner. 

    If you don’t care about staying vegetarian, lean into the buffalo theme, serving alongside slow cooker buffalo chicken chili, instant pot buffalo chicken dip, and buffalo chicken zucchini boats!

    Storage & Reheating Instructions

    • Refrigeration – While buffalo cauli wings are best served fresh, you can store leftovers in an airtight container in the fridge for up to 3 days.
    • Freezing – These aren’t ideal for freezing since the sauce can make the cauliflower soggy once thawed, but I suppose if you want to prep ahead, you can freeze the roasted (unsauced) cauliflower florets for up to 2 months and toss them in buffalo sauce after reheating.
    • Reheating – For the crispiest results, reheat in an air fryer at 375ºF for 5–7 minutes or in the oven at 400ºF for about 10 minutes. Avoid the microwave if possible, as it makes the coating soft instead of crisp.

    Recipe Success Tips

    • Don’t toss the stems and leaves. If you’re breaking down a whole head of cauliflower, save those stems and leaves. They roast up beautifully with a little oil, salt, and pepper, and can be added right to the pan alongside the florets for extra crunch, extra servings, and less food waste.
    • Cut even-sized pieces. Try to keep your florets roughly the same size so they roast evenly. Smaller pieces may crisp up faster, while larger ones can stay a little too firm in the middle.
    • Preheat your baking sheet. Sliding the cauliflower onto a hot pan helps kickstart that golden crust and prevents sogginess.
    • Don’t overcrowd. Spread the florets out in a single layer with space between them. Overcrowding traps steam, which keeps them from crisping.
    • Flip halfway through. Turn the cauliflower over while roasting to ensure an even, crispy exterior on all sides.
    • Sauce at the right time. Toss the cauliflower in buffalo sauce after roasting the first time, not before, to keep the coating crisp instead of soggy.

The cauliflower itself brings natural fiber (about 2 grams per serving), which supports digestion and helps you feel satisfied without being overly heavy. You’ll also get a boost of vitamins, minerals, and antioxidants that you wouldn’t find in traditional chicken wings.

    Most of the 9 grams of fat comes from heart-healthy avocado oil and butter. While butter adds signature richness to the buffalo sauce, the balance with avocado oil means you’re also getting monounsaturated fats that can support heart health when enjoyed in moderation. Consider opting for organic, grass-fed butter for the best nutrient makeup!

    Ingredients

    • 1 ½ lbs cauliflower florets
