    As a Registered Dietician with a family that loves to eat, my house is always chock-full of healthy homemade snacks.     • Corn Chex Cereal – My favorite flavor of classic Chex cereal! You can taste the faint sweetness of corn in every bite.
    • Old-Fashioned Rolled Oats – Adding oats to the mix boosts the whole-grain fiber content and gives our Chex mix a quasi-granola vibe. 
    • Chopped Pecans – Mildly sweet, perfectly buttery, and delightfully crunchy.
    • Roasted Pumpkin Seeds – Once pumpkin season rolls around, I’m usually up to my elbows in this delicious, nutrient-packed by-product. Fall Chex mix is the perfect way to put them to use!
    • Pumpkin Pie Spice – For a pop of cozy, seasonally appropriate seasonings without any fuss. Feel free to use either homemade or store-bought.
    • Salt & Unsalted Butter – Starting with unsalted butter and adding salt to taste is the easiest way to ensure consistency from batch to batch, regardless of what brand butter you use.
    • Pure Maple Syrup – This minimally processed liquid sweetener helps bind the Chex mix together and adds another layer of fall-inspired flavor. Make sure to use the real stuff, not cheaper brands that are really just colored corn syrup with maple flavoring.
    • Brown Sugar – Adding brown sugar to the maple syrup ensures a perfectly sticky, caramelly sweet result. Feel free to use either light or dark brown sugar.
    • Vanilla Extract – Aromatic, warm, sweet, and complex, vanilla adds a certain je ne sais quois that makes this Chex mix feel extra special.

    Substitutions

    • Corn Chex Cereal – Feel free to swap in either rice or wheat Chex if you prefer. You can also use generic store brand Chex to save a bit of money!
    • Old-Fashioned Rolled Oats – While they have a higher glycemic index, lower fiber, and less chew, you can use quick-cooking (not instant) oats in a pinch. 
    • Chopped Pecans – Other nuts like sliced almonds, chopped walnuts or chopped hazelnuts can easily be used instead.
    • Roasted Pumpkin Seeds – Feel free to swap in more nuts, or use an alternative like sunflower seeds.
    • Pumpkin Pie Spice – You’re welcome to use any warming spice blend you like. Try experimenting with cinnamon, ginger, cardamom, nutmeg, allspice, and cloves in varying measures, or use another blend like chai masala instead.
    • Salt & Unsalted Butter – Only have salted butter? Use that and omit the added salt!
    • Pure Maple Syrup – While it won’t have quite the same autumnal feel, either agave nectar, honey, or date syrup can be used instead.
    • Brown Sugar – You can easily make your own using white sugar and molasses in a 1 cup to 1-2 tablespoon ratio, depending on whether you prefer light or dark brown sugar. Alternatively, use another brown sugar variety like grated piloncillo or jaggery, coconut or maple sugar, or muscovado sugar.
    • Vanilla Extract – An equal amount of vanilla paste or vanilla powder can be used, or use half as much dried ground vanilla bean.
    • Dried Cranberries – Other good sweet-tart options include currants or chopped dried apricots or dried cherries.
    • Chopped Dried Figs – Try raisins, sultanas, or chopped dates for their sweet chew.

    How To Make Pumpkin Spice Chex Mix For Fall

    Step 1: Mix the dry ingredients. In a large mixing bowl, stir together the Corn Chex, rolled oats, chopped pecans, roasted pumpkin seeds, pumpkin pie spice, and a pinch of salt until everything is evenly combined.

    Step 2: Make the maple-butter glaze. Melt the butter in a saucepan over medium heat. Once it’s melted, whisk in the maple syrup and brown sugar until the sugar fully dissolves. Take it off the heat and stir in the vanilla extract.

    Step 3: Combine wet and dry. Pour the warm maple-butter mixture over the dry ingredients in the bowl.

    Step 4: Toss it all together. Gently toss everything together until the Chex and oats are evenly coated in that buttery, spiced goodness.

    Step 5: Bake and add dried fruit. Spread the mixture out in an even layer on a parchment-lined baking sheet. Bake at 325ºF for 25 minutes. Remove the pan from the oven, sprinkle the dried cranberries and chopped figs over the top, give it a quick toss, and spread it back into an even layer. Pop it back in the oven for another 5 minutes.

    Step 6: Cool and store. Let the Chex mix cool completely on the baking sheet—at least an hour at room temperature. Once it’s cool, store it in airtight containers and enjoy within a week (if it lasts that long!).

    • Gluten-Free – Use certified gluten-free rolled oats and double-check that your Chex is labeled gluten-free (classic Corn Chex & Rice Chex are, but it’s worth confirming if you’re using a different brand or flavor!).
    • Dairy-Free/Vegan – Swap the butter for a plant-based alternative like vegan butter or refined coconut oil. Make sure your brown sugar is vegan (some brands use bone char in processing).
    • Nut-Free – Omit the pecans and replace them with extra pumpkin seeds, sunflower seeds, pretzel nuggets, granola clusters, or even crispy roasted chickpeas for a similar crunch.

    Is Chex mix healthy or unhealthy?

    Equipment

    • 1 medium saucepan
    • 1 large baking sheet

    Ingredients

    • 3 cups corn Chex cereal
    • 1 cup old fashioned rolled oats
    • 1 cup chopped pecans
    • ¾ cup roasted pumpkin seeds (pepitas, no shell)
    • 1 tbsp pumpkin pie spice
    • ¼ tsp salt
    • ½ cup unsalted butter (one stick)
    • ½ cup pure maple syrup
    • ½ cup brown sugar packed
    • 1 tsp vanilla extract
    • ½ cup dried cranberries
    • ½ cup chopped dried figs

    Instructions

    • Preheat oven to 325° and line a large baking sheet with parchment paper.
    • In a large bowl, stir together Chex, oats, pecans, pumpkin seeds, pumpkin pie spice, and salt. Set aside.
    • In a medium saucepan, melt the butter over medium heat. Add the maple syrup and brown sugar and stir until the sugar is dissolved. Remove from heat and stir in the vanilla extract.
    • Pour the butter mixture into the Chex mixture and toss to combine.
    • Spread the Chex mix evenly on the prepared baking sheet. Bake for 25 minutes. After the 25 minutes, remove from the oven and sprinkle the cranberries and figs evenly over the Chex mix. Return to the oven and bake another 5 minutes.
    • Allow the Chex mix to cool on the baking sheet for at least 1 hour, until it is cooled and crunchy. Transfer to an airtight container and store at room temperature for up to 7 days.
