Crispy bacon, juicy grilled chicken, shaved parmesan, and that creamy Caesar dressing — it hits every flavor note and keeps me full for hours. It’s my favorite easy weeknight dinner that never feels like a compromise.

    Caesar salad is genuinely one of my all-time favorite meals — I could eat it every single day and never get bored. But the version I want to eat isn’t the sad, overdressed bowl from a restaurant with not enough chicken and way too much dressing from a bottle.     • Grilled chicken Caesar salad with avocado —  Sliced avocado is an absolute game-changer here. The creamy richness plays beautifully against the tangy dressing.
    • Kale instead of romaine — Massaged kale holds up even better to the dressing and adds an extra nutritional punch.
    • Store-bought Caesar dressing — In a pinch, use your favorite bottled version. But I really, really encourage you to try the homemade one first.

    How to Make Grilled Chicken Caesar Salad

    1. Season and grill the chicken. Preheat your grill to 450°F. Toss the chicken breasts in Italian seasoning, garlic powder, salt, and pepper, coating evenly on all sides. Place on the hot grill and cook for 10 minutes without moving.
    2. Make the Caesar dressing. Whisk together the homemade Caesar dressing and pop it in the fridge while you get everything else ready. The flavors only get better as it sits.
