    Hot Honey Grilled Chicken Salad

    Next time you’re in need of an easy, refreshing summer dinner, look no further than my Grilled Hot Honey Chicken Salad! Crunchy romaine lettuce is topped with a rainbow of juicy cherry tomatoes, sweet corn, creamy avocado, sharp red onions, crisp cucumbers, and tender grilled chicken, then drizzled in a spicy-sticky-sweet hot honey dressing. Yum!

    Now that the temperature is consistently in the 80s or higher, I’ve decided that it is officially Grilling Season. So far this year, we’ve already made my grilled chicken shawarma wraps, green goddess grilled chicken salad, grilled bang bang chicken skewers, grilled steak salad, and this hot honey grilled chicken salad. Needless to say, it’s been a great season so far.

    Using the grill is one of my favorite summertime cooking hacks—by doing all your cooking outside, you’re saving on AC costs and minimizing the dirty dishes. To me, that’s a huge win-win! And pairing all that grilled meat goodness with a spectacular salad base is the quickest way to my heart. This hot honey chicken salad is just my newest love!

    To anyone who believes salads are too dainty to count as a meal, I challenge you to try this supremely satisfying entrée. It’s got everything I’m after—lean protein, plenty of veggies, and a delightful mix of contrasting temperatures and textures. Even my weight-lifting, firefighting hubby is full after eating a serving, so you know it’s hearty AF.

The hot honey-marinated chicken is grilled to juicy perfection, bringing a caramelized, spicy-sweet kick—the ideal foil to the cool crunch of romaine, cucumbers, and red onion. But, that’s not all.

    Sweet corn kernels and cherry tomatoes add juicy pops of brightness, while creamy avocado lends a mellow richness. A drizzle of smoky, tangy, garlicky hot honey vinaigrette ties everything together with just the right amount of fiery interest. It’s a salad that eats like a meal, delivering bold flavor in every bite without feeling heavy—just what I want on a warm summer night.

    Ingredients Needed

    • Boneless Skinless Chicken Breasts – Make sure to get whole chicken breasts that are nice and thick so they can stand up to the heat of the grill without drying out.
    • Hot Honey Vinaigrette – Making this easy salad dressing is as quick as measuring the ingredients in a mason jar and shaking them up. No chopping, no equipment, just massive flavor. (Note that if you have everything for making the vinaigrette, you have everything for the marinade, too.)
    • Romaine Lettuce – While I love all lettuces, romaine has the best crunch—just the right texture to stand up to our hot honey grilled chicken.
    • Cherry Tomatoes – These cheerful little orbs are the only tomatoes worth buying all year round, regardless of whether it’s tomato season.
    • Red Onion – The magenta hue of red onions is eye-catching (we eat with our eyes first!) and the sharp-sweet taste is ideal for eating raw.
    • Cucumber – If possible, opt for thin-skinned seedless cucumbers to make prep even easier. (If not, just cut your cucumber in half from nose to tail and scoop out the seeds before slicing.)
    • Corn Kernels – I like to use defrosted frozen corn kernels for convenience—they have the same al dente “bite” as fresh.
    • Avocado – For a touch of creamy richness.

    Substitutions

    • Boneless Skinless Chicken Breasts – Feel free to swap in boneless skinless chicken thighs if you prefer dark meat. 
    • Hot Honey Vinaigrette – Any vinaigrette-style salad dressing with a viscous consistency and a hint of sweetness (like my fresh lemon vinaigrette) can be used instead.
    • Romaine Lettuce – Iceberg lettuce doesn’t have quite the same nutritional chops as romaine, but provides a similar crunch. You could also swap in shredded cabbage if you like!
    • Cherry Tomatoes – If tomatoes are in season, you can always dice slicers instead.
    • Red Onion – Green onions, shallots, sweet onions, or pickled red onions are all great alternatives.
    • Cucumber – Any crunchy veggie can be used instead—think sugar snap peas, crisp jicama, or spicy radishes.
    • Corn Kernels – Feel free to swap in another sweet, colorful vegetable like chopped bell peppers.
    • Avocado – You can either omit the avocado, or swap in some creamy cheese to replace the richness—tangy goat cheese or sharp cheddar would both work great.

    How To Make Grilled Hot Honey Chicken Salad

    Step 1: Marinate. Whisk the hot honey marinade ingredients together in a medium mixing bowl. Add the chicken breasts, turning to coat them, then cover and refrigerate for at least 6 hours, or overnight.

    Step 2: Grill the marinated hot honey chicken in a BBQ set to 450ºF. Cook for 10 minutes, then flip and continue to cook until the internal temperature reaches 165ºF—about another 8-10 minutes. Remove the chicken from the grill, tent lightly with foil, and rest for 10-15 minutes before slicing against the grain.

    Step 3: Wash & Chop the romaine lettuce. Split it between 2 salad bowls.

    Step 4: Layer the top of the lettuce with the corn, avocado, red onion, tomatoes, cucumber and sliced hot honey chicken.

    Step 5: Drizzle the hot honey vinaigrette over the top of the salads, then dig in! (Feel free to toss if you like—I personally like keeping things separate so I can build my bite each time.)

    Optional Variations & Dietary Adjustments

    • Vegetarian – Swap out the chicken breasts in favor of pressed extra-firm tofu. As a bonus, tofu will be fully marinated within 30 minutes or so!
    • Pescatarian – Jumbo shrimp are great on the grill (just use a basket or thread them on a skewer), marinate quickly, and pair well with our hot honey glaze. You could also cook them on the stovetop like in my spicy shrimp tacos recipe.

    Storage Instructions

    • Hot honey chicken is best fresh off the grill (especially if you like the hot-cool contrast). That said, feel free to store it in an airtight container in the fridge for 3-4 days.
    • Store the salad components and vinaigrette separately in airtight containers in the fridge to keep everything fresh until you’re ready to dig in. 
    • Pre-assembling the salad for packed lunch? Put the heartier veggies on the bottom of your container with the dressing and pack the lettuce on top. When you’re ready to eat, just shake it all up!

    Serving Suggestions

    This grilled hot honey chicken salad is hearty enough to stand on its own as a main course, perfect for a summer lunch or weeknight dinner. Serve it warm, right off the grill, for a satisfying contrast between the hot, caramelized chicken and the cool, crisp vegetables. For extra crunch, try tossing in a handful of crushed tortilla chips or roasted pepitas just before serving.

    If you’re entertaining, you can easily turn this into a beautiful composed salad platter—arrange all the components separately so guests can build their own bowl. It also works great as a wrap filling: just pile everything into a large whole grain tortilla for a spicy-sweet, veggie-packed lunch on the go. 

    Recipe Success Tips

    • Don’t Touch! Leave the chicken alone once it hits the grates. You want to allow the meat to get a bit of a “crust,” which releases easily. If you try to fuss with it too early, you risk the meat sticking to the grates and tearing your chicken breasts.
    • Speedy Hack. Use two delitainer lids to quickly halve your cherry tomatoes in a single slice. 
    • For the juiciest chicken, pull the breasts from the grill when they hit an internal temperature of 162-163ºF. There will be a bit of carryover cooking that brings the temp to 165ºF as it rests under the foil.

    Hot Honey Grilled Chicken Salad Nutrition

    This grilled hot honey chicken salad packs a powerful nutritional punch, offering a satisfying balance of protein, fiber, and healthy fats. With 37 grams of protein per serving, it’s an excellent choice for supporting lean muscle mass and promoting satiety—meaning it’ll actually keep you full. 

    The 10 grams of fiber, mostly from the romaine, tomatoes, avocado, and cucumbers, also contribute to digestive health and help regulate blood sugar.     Ingredients

    Grilled Hot Honey Chicken:

    • 2 chicken breasts boneless/skinless
    • 2 tbsp hot honey
    • 1 tbsp avocado oil
    • 2 tsp apple cider vinegar
    • ½ tsp garlic powder
    • ½ tsp smoked paprika
    • ½ tsp chili powder
    • ¼ tsp salt

    Hot Honey Chicken Salad:

    • 4 cups romaine lettuce chopped
    • ½ cup cherry tomatoes halved
    • 1 large avocado sliced
    • ½ medium red onion sliced
    • ½ medium cucumber sliced
    • ½ cup frozen corn thawed
    • ½ cup hot honey vinaigrette

    Instructions

    • Marinate the chicken: Stir together the 2 tbsp hot honey, 1 tbsp oil, apple cider vinegar, garlic powder, smoked paprika, chili powder, and salt in a ziplock bag or medium bowl. Toss the chicken until well coated, and allow to marinate in the fridge for at least 6 hours or overnight.
    • Grill the chicken: Preheat your grill to 450°. Place the chicken on the grill and cook for 10 minutes. After 10 minutes, flip the chicken and cook an additional 5-6 minutes, or until the chicken reaches an internal temperature of 165°. Transfer the grilled chicken to a plate and allow to cool for about 10 minutes. Once cool enough to handle, slice and set aside.
    • Meanwhile, make a batch of homemade hot honey vinaigrette and set aside.
    • Assemble your salads with lettuce, tomatoes, avocado, red onion, cucumber, corn, and grilled hot honey chicken. Drizzle with hot honey vinaigrette and serve!

      Really enjoyed this salad. Alot of crunch and flavors going on. The dressing was very good but on the sweet side (I like sweet) maybe because I made my own hot honey. We ended up drizzling sriracha. Very big salads.
