Juicy grilled chicken, crispy bacon, shaved parmesan, cherry tomatoes, and crunchy croutons over crisp romaine, tossed in a homemade Caesar dressing with no anchovies. A complete 30-minute meal with 47g of protein per salad.
Make the chicken: Preheat your grill to 450°. Toss the chicken in the Italian seasoning, garlic powder, salt, and pepper, coating evenly on all sides.
Place the chicken on the grill and cook for 10 minutes. After 10 minutes, flip the chicken and cook an additional 5-6 minutes, or until the chicken reaches an internal temperature of 165℉. Transfer the grilled chicken to a plate and allow to cool for about 10 minutes. Once cool enough to handle, slice and set aside.
Meanwhile, make a batch of homemade Caesar salad dressing (you'll have extra) and set aside.
Add your lettuce to a large mixing bowl and toss with ¼ cup Caesar dressing. Divide the lettuce into 2 bowls, then top with tomatoes, bacon, shaved parmesan, croutons, and grilled chicken. Serve!
