What does strawberry banana bread taste like?
This banana bread recipe has a strong banana flavor in every slice and combined with fresh berries, this bread is on a whole other level.
It’s sweet, fluffy, and moist, just like banana bread should be. It’s also a very soft bread, and with all the extra strawberry slices baked on top, it’s bursting with springtime strawberry flavor!
Ingredients
Bananas – It wouldn’t be banana bread without bananas! Make sure to use ripe, very brown bananas for the most flavor!
Eggs – Eggs help to keep everything held together in the banana bread, don’t skip the eggs or you might have a crumbly loaf!
Vanilla extract – Lots of vanilla in this recipe helps to elevate the flavor and make it even more delicious.
Plain Greek yogurt – I like to use plain Greek yogurt in place of oil in baking. It’s healthier, and is so easy to mix right into the batter!
Organic cane sugar – Organic cane sugar is a little less processed than plain white sugar, but still adds all the sweetness you’ll need in your strawberry banana bread.
Baking powder – The main leavening agent in this recipe. Your strawberry banana bread will not rise and will end up mushy and gooey if you don’t use baking powder, so don’t skip it.
Baking soda – Adds a little bit more leavening agent to the batter without overpowering it.
Whole wheat pastry flour – My main baking flour, whole wheat pastry flour is 100% whole wheat but still fine enough for a soft, fluffy baked product.
Strawberries – Fresh strawberries take this banana bread to the next level, and are perfect to add a little summer flavor any time of year!
Substitutions
Eggs – If you want to make this recipe eggless, mix 2 T of ground flaxseed with 1/4 cup cold water and let it sit for a few minutes to gel up. Then, add it in when the recipe states to add egg in.
Plain Greek yogurt – You can use flavored Greek yogurt, or even regular yogurt in place of plain Greek yogurt if you’d like.
Organic cane sugar – Any granulated, white sugar will work for this recipe. I used a white sugar to keep the bread a little lighter in color, but if color doesn’t matter to you, coconut sugar or even brown sugar would be so good in this recipe.
Whole wheat pastry flour – Regular pastry flour is the only flour I would suggest substituting in. This recipe hasn’t been tested with any other types of flour, but feel free to experiment!
Strawberries – I love a good strawberry bread, but that doesn’t mean you can’t experiment with other fruit! Raspberries, blueberries, or blackberries would all taste amazing in this recipe. You could even do a mixture to make a loaf of triple berry-flavored banana bread!
Instructions
- In a large bowl, mash your bananas until smooth.
- Stir in eggs, vanilla, plain Greek yogurt, organic cane sugar, baking powder, and baking soda. Mix until well combined.
- Add the whole wheat pastry flour and mix until just combined, try not to overmix.
- Fold in chopped strawberries.
- Pour batter into a greased bread pan.
- Top with sliced, fresh strawberries if desired. Bake in preheated oven for 70-75 minutes, until a toothpick inserted in the middle comes out clean with no crumbs or batter. Allow to cool, then slice and serve!
Tips & FAQ
Absolutely you can. If you use too much banana in banana bread, your dough will remain doughy and wet, and won’t bake right. It may also sink in the middle, or remain raw as it bakes. It’s a good idea to always follow the recipe and make sure that you’re not using too much banana.
The short answer is, it depends! Ingredients vary widely with banana bread recipes, and some call for a lot of oil, sugar, etc. This strawberry banana bread recipe is whole wheat, oil-free, and made with healthy, natural ingredients, making it a healthier alternative to some other banana bread recipes.
You can definitely use frozen bananas for banana bread as long as you thaw them out. They will be extremely difficult to mash if they’re frozen, and you need to mash them to get the texture right. The good news is that banana thaws at room temperature in about 15 minutes, so you won’t have to wait too long!
In general, yes. But, you can use a perfectly yellow banana to make banana bread as long as it isn’t green. Using a green banana will result in a not-so-sweet flavor in your banana bread and it honestly just won’t taste quite right. Using a yellow banana will result in a good loaf of banana bread, but using brown bananas will give the sweetest and most flavorful result.
