Baking with matcha is easier than you think, and these matcha blondies are no exception. They’re rich in white chocolate and matcha flavors and are made with healthy ingredients like Greek yogurt and whole wheat pastry flour.

What do matcha brownies taste like?
These matcha brownies taste a lot like blondies, except they have a hint of matcha flavor. Because they’re made with white chocolate, they don’t have a rich chocolate flavor like regular brownies.
Either way, they’re delicious, chewy, and soft, and are a totally delicious matcha dessert!
Ingredients
Coconut oil – This is the main fat source of this recipe, but doesn’t add any coconut flavor at all. It also melts really well with the white chocolate, making it ideal for this recipe.
White chocolate chips – White chocolate chips are a sweetener source, but they also help to make the brownies a little more dense and flavorful, too!
Organic cane sugar – I like to use organic cane sugar for recipes where color matters because it’s relatively colorless and is also less processed than refined white sugar.
Vanilla extract – Make sure to use 100% pure vanilla extract to avoid any added preservatives or artificial flavors. Pure vanilla extract adds a ton of deep, rich vanilla flavor to these matcha brownies.
Greek yogurt – The Greek yogurt adds some moisture to the brownies and helps with their chewy texture.
Egg – The egg helps everything stick together, and helps the matcha brownies rise a little bit without becoming way too airy.
Baking soda – Baking soda is the only leavening agent, and you don’t need much for this recipe! About 1/4 tsp is all you need to make the texture of these things come out perfect.
Matcha powder – The main flavor in these brownies is green tea, which comes from matcha powder! Make sure to choose a high-quality matcha powder if you can. THat will keep the color and flavor the absolute best!
Whole wheat pastry flour – This is my absolute favorite flour to bake with because it is 100% whole wheat but is still soft and fine enough to make deliciously soft and chewy baked goods.
Substitutions
Coconut oil – Any solid oil will work in this recipe, like vegan butter or even regular grass-fed butter.
White chocolate chips – If you don’t have white chocolate chips on hand, you can cut up some white chocolate chunks or a white chocolate bar to use instead!
Organic cane sugar – Regular, refined white sugar will work in this recipe. Coconut sugar will also work as a substitute but your brownies may not turn out as green because of how dark coconut sugar is!
Matcha powder – Feel free to use culinary or ceremonial grade matcha powder, just make sure that whatever you choose that it’s unsweetened! Don’t use matcha latte mix either, it is not the same!
Whole wheat pastry flour – Regular pastry flour is a good substitute if you don’t have whole wheat pastry flour, but I would not try to use any other flour unless you’re okay with experimenting!
Instructions
- Place coconut oil and ½ cup white chocolate chips in a small, microwave-safe bowl. Microwave for 1 minute, then stir. Continue to microwave in 30 second intervals until everything is smooth and melted. Pour into a large mixing bowl.
- Whisk in organic cane sugar, vanilla, and plain Greek yogurt until smooth and no clumps remain.
- Whisk in egg, baking soda, and water until smooth.
- Whisk in matcha powder. There may be tiny clumps of matcha powder, that’s okay!
- Stir in whole wheat pastry flour until just combined, try not to over mix.
- Line an 8×8 pan with parchment paper, then pour the batter in. Make sure to spread it evenly in the pan.
- Sprinkle with the remaining ¼ cup of white chocolate chips. Bake for 28-30 minutes or until a toothpick inserted in the center comes out clean with no crumbs or batter. Allow to cool, then cut into 9 pieces and eat!

Yes they do! Most kinds of chocolate pair really well with matcha and green tea flavor. These matcha brownies are made with white chocolate, and seriously taste so good!
Absolutely you can! Ceremonial matcha powder is much more expensive but has much better color and flavor than culinary matcha powder most of the time. You can use either culinary matcha powder or ceremonial matcha powder for these matcha brownies!
You may have overbaked them, or possibly used a lower-quality matcha flavor. If you use a darker sugar or flour, that can also mask the green color of the brownies.
I like to use ceremonial matcha powder because the color and flavor is so much better than if you use culinary grade. However, I did find culinary grade matcha that I love and highly recommend. You can find my two favorite matcha powders to use for these brownies here and here.
