Zucchini bread is a summer staple for a reason — it’s an easy way to use up a garden overflow, and the zucchini itself basically disappears into the crumb, leaving behind moisture without much flavor of its own. This version leans into that a little further by adding chocolate chips and warm spices, so it eats more like a treat than a vegetable side project.

What makes this loaf different from a typical bakery-style zucchini bread is what’s mixed into the batter. A scoop of vanilla protein powder brings each slice up to 9g of protein, and swapping in Greek yogurt and applesauce for most of the oil keeps the fat content in check without drying anything out. It still bakes up moist and tender — the protein powder disappears into the batter the same way the zucchini does.

If you like keeping protein-boosted baked goods on hand, this one fits right in with a few other recipes on the blog. My High Protein Banana Bread is a great next bake if you’ve got ripe bananas instead of zucchini, and my Double Chocolate Zucchini Muffins are perfect if you want something more grab-and-go.

What Does This Protein Zucchini Bread Taste Like?

Moist and tender, with warm notes of cinnamon and nutmeg running through every bite. The chocolate chips melt slightly into pockets throughout the loaf, and the zucchini adds moisture without adding any vegetable flavor you’d notice.

You won’t taste the protein powder either — it blends into the batter the same way the zucchini does, leaving you with a slice that tastes like classic chocolate chip zucchini bread.

Why You Will Love Protein Chocolate Chip Zucchini Bread Recipe

    • 9g of protein per slice: a meaningful boost compared to a typical zucchini bread.
    • One loaf pan: two bowls to mix, then it all bakes together in a single pan.
    • Lighter fat profile: Greek yogurt and applesauce stand in for most of the oil.
    • No need to squeeze the zucchini: skip that messy step — the moisture is part of the plan here.
    • Freezer-friendly: slices freeze and thaw well for an easy make-ahead snack.

    Ingredients Needed

    • Whole wheat pastry flour: the base of the batter — higher fiber than all-purpose flour
    • Vanilla protein powder: the ingredient that boosts each slice up to 9g of protein.
    • Baking soda & baking powder: help the loaf rise.
    • Cinnamon & nutmeg: warm baking spices.
    • Coconut sugar: sweetens the batter more naturally than traditional sugar.
    • Plain Greek yogurt: adds moisture and protein while keeping the fat content down.
    • Applesauce: replaces most of the oil you’d find in a traditional zucchini bread.
    • Shredded zucchini: don’t squeeze out the moisture — it’s what keeps the loaf tender.
    • Chocolate chips: for pockets of melty chocolate throughout.

    Substitutions & Variations

    • Protein powder flavor: a plain or chocolate protein powder both work in place of vanilla, depending on what you have.
    • Applesauce swap: avocado oil works in its place if you’d rather use oil.
    • Coconut sugar swap: packed brown sugar is a 1:1 substitute.
    • Whole wheat pastry flour swap: use all-purpose flour, or make your own whole wheat pastry flour blend with 50% all-purpose flour and 50% whole wheat flour.
    • Add-in swap: chopped walnuts or pecans work alongside or in place of the chocolate chips.

    Instructions

    • Step 1: Preheat your oven to 350°F and rub a little butter or nonstick spray around a 9×5-inch loaf pan.
    • Step 2: Grab a bowl and whisk together the flour, protein powder, baking soda, baking powder, cinnamon, nutmeg, and salt, then set it off to the side for a minute.
    • Step 3: Whisk the coconut sugar, Greek yogurt, applesauce, eggs, and vanilla together until you’ve got a smooth, lump-free mixture.
    • Step 4: Pour the dry mix into the wet mix and stir just until it comes together — you’re looking for a few flour streaks still visible, not a perfectly smooth batter.
    • Step 5: Fold in the shredded zucchini along with most of the chocolate chips (save a couple tablespoons for the top), stirring only enough to bring everything together.
    • Step 6: Transfer the batter to your prepared pan, sprinkle the reserved chocolate chips over the surface, and bake!

    Recipe Success Tips

    • Don’t squeeze the zucchini: the moisture is exactly what keeps this loaf from turning dry.
    • Use the large holes on a box grater: coarse shredded zucchini shows up in the bake better than finely shredded zucchini.
    • Don’t overmix: stir just until the flour disappears — overmixing leads to a denser, tougher loaf.
    • Check for doneness with a toothpick: it should come out clean or with a few moist crumbs, not wet batter.
    • Let it cool in the pan: at least 15-20 minutes before turning it out, so it holds together when sliced.

How to Store Chocolate Chip Zucchini Bread

Store the loaf tightly wrapped or in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.

For longer storage, slice and freeze individual pieces for up to 3 months — they thaw quickly on the counter or in the microwave.

    Is Zucchini Bread Healthy?

Yes — with 9g of protein per slice, this is a genuinely high protein zucchini bread, and a healthier chocolate chip zucchini bread than most bakery versions you’ll find.

Each slice has notably more protein than a typical chocolate chip zucchini bread, which usually lands closer to 2-3g. Between the protein powder, Greek yogurt, and eggs, this loaf has real staying power for a snack.

    Pricing Info

This recipe costs about $5.68 total, or $0.47 per slice. That’s a fraction of what you’d pay for a single slice of protein bread at a specialty bakery or coffee shop, where a comparable high-protein baked good can easily run $4-6 apiece.

This is what I personally paid to make this recipe:

    • 1 ½ cups whole wheat pastry flour: $0.34
    • ½ cup vanilla protein powder: $1.76
    • 1 tsp baking soda: $0.01
    • ½ tsp baking powder: $0.02
    • ¼ tsp ground cinnamon: $0.01
    • ½ tsp nutmeg: $0.01
    • ¼ tsp salt: $0.01
    • ⅔ cup coconut sugar: $0.52
    • ½ cup plain Greek yogurt: $0.48
    • ½ cup applesauce: $0.28
    • 2 large eggs: $0.90
    • 1 tsp vanilla extract: $0.04
    • 1 cup shredded zucchini: $0.50
    • ½ cup chocolate chips: $0.80

The total comes out to be around $5.68 or roughly $0.47 per slice!

    FAQs

Do you need to squeeze the moisture out of the zucchini?

No — this recipe is built around keeping that moisture in. Squeezing the zucchini dry would leave the loaf drier than intended, so shred it and add it straight to the batter.

Can you freeze protein zucchini bread?

Yes. Slice the cooled loaf, wrap pieces individually or in a freezer bag, and freeze for up to 3 months. Thaw at room temperature or warm briefly in the microwave.

What protein powder works best in this recipe?

A vanilla whey or plant-based protein powder both work well here. Avoid protein powders with a strong artificial flavor, since it can come through more than you’d expect once baked.

Can you use a different pan size?

This recipe is sized for a 9×5-inch loaf pan. A slightly larger or smaller loaf pan will work, but you may need to adjust the bake time — start checking a few minutes early with a toothpick.
