This Protein Chocolate Chip Zucchini Bread is a moist, snackable loaf with 9g of protein per slice, made lighter with Greek yogurt and applesauce. It's an easy way to use up a zucchini haul without any squeezing or draining required.
1cupshredded zucchini(do not squeeze out moisture)
½cupchocolate chips
Instructions
Preheat oven to 350℉ and grease your loaf pan.
In a mixing bowl, stir together the flour, protein powder, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
In a separate bowl, whisk together the coconut sugar, Greek yogurt, applesauce, eggs, and vanilla until no lumps remain.
Add the dry ingredients and stir until roughly combined but not smooth (do not fully mix).
Add the shredded zucchini and all but 2 tbsp of the chocolate chips, then stir until just combined.
Pour the batter into the prepared loaf pan, sprinkle the remaining chocolate chips over the batter, and bake in the preheated oven for 45-50 minutes. Check at the 35-minute mark and tent with foil if browning too quickly. Bake until baked through. Allow to cool, then slice and serve!
