Healthy Taco Salad

Guys! We are sooooo close to summer! I’m literally so excited. Summer for me means morning jogs with my dog, frozen cocktails, and lots and lots of summery salads. This healthy taco salad is a go-to when our house with no air conditioning is a sweltering 110 degrees (this is where frozen cocktails come in…yesss). No one wants hot food when you’re sweating just trying to eat. Ugh.

It’s All In The Toppings

So what makes a fiber-packed salad something that you actually want to eat? The toppings of course. As long as you throw on healthy fats and fiber-rich foods, you’ll be satisfied and full until your next meal. Click here for more on the benefits of fiber. It’s crazy important for your health and for weight loss!

I’ve heard people say (mainly my husband, insert eye roll here) that salads are lame, not filling, boring, whatever. Honestly, they don’t have to be. There’s no reason for your salad to be boring, unsatisfying, or not filling enough. And you don’t have to douse a salad in ranch dressing just to make it good. This taco salad is not only delicious, it’s healthy too! No dressing required! Trust me, I know it’s weird, but you really don’t need dressing with this epic deliciousness. All you need is plain Greek yogurt and the best homemade salsa!

Side Note: I love sour cream, but it just doesn’t sit well with my gut. I use plain Greek yogurt instead of sour cream in everything. It tastes EXACTLY the same. Tommy was skeptical before he tried it, but even he likes it. Which is a win in itself. Plus, it’s way higher in protein than sour cream and has probiotics to help maintain a healthy gut. Win win!

Taco Salad

Ingredients

  • 1 lbs ground turkey
  • ¼ cup taco seasoning
  • 1 head romaine lettuce (chopped)
  • 4 oz sliced olives
  • 1 avocado sliced
  • 1 cup black beans
  • 1 cup salsa
  • 1 cup plain Greek yogurt
  • 1 cup shredded cheddar

Instructions

  • In a medium skillet, brown the ground turkey. Add the taco seasoning about half way through cooking, stirring until well combined.
  • Assemble your salads with romaine lettuce, ground turkey, olive, avocado, beans, salsa, Greek yogurt, and cheese.

This recipe is awesome because there are enough for left overs, and any extra ingredients can be thrown in the freezer or re-purposed into a burrito, soup, or a taco bowl.
