Boursin Mashed Potatoes

Make-ahead Boursin mashed potatoes are the perfect Thanksgiving recipe! These Boursin cheese mashed potatoes are easy, herby, and delicious!

Well, it’s officially my favorite season ever! The leaves are changing colors, the holidays are coming, and it’s time to start pinning down what recipes you’re going to make for Thanksgiving and Christmas.

Fortunately, I’ve created the perfect mashed potato recipe that you’re definitely going to want to make this year. Even though you can make these ahead of time, there have been no leftovers in the Byrd house whenever I’ve made these so far.

Boursin mashed potatoes are smooth, creamy, herby, fresh, cheesy, and perfectly whipped. They can be made 2 days ahead of time, only take about 20 minutes, and are irresistible!

What is Boursin cheese?

Boursin is the brand name of the cheese, which is really flavored Gournay cheese. It’s a type of French cheese, very similar to cream cheese, although it’s a bit more crumbly.

    What do Boursin mashed potatoes taste like?

    These mashed potatoes are made with Boursin cheese, so they taste creamy, herby, garlicky, and have a ton of fresh flavor from the chives, too!

    They’re smooth and whipped to perfection, making them the ultimate comfort food and Thanksgiving recipe!

    Ingredients

    The ingredients needed to make Boursin mashed potatoes.

    Yellow potatoes: I used yellow potatoes in this Boursin whipped potato recipe because of how creamy and buttery they taste. Plus, they have a beautiful color and whip really smoothly, making them ideal for mashed potatoes.

    Boursin cheese: Boursin cheese melts really quickly and blends seamlessly into mashed potatoes. The star of this recipe, make sure to use the Garlic and Fine Herb flavor to give your potatoes really delicious garlic and herb flavor!

    Whole milk: Although you can use any plain, unflavored milk that you want to, I chose to use whole milk because it helps to make the Boursin mashed potatoes extra creamy without adding too many calories.

    Sea salt: Typically I say to omit the salt if you’re trying to watch your sodium intake, but mashed potatoes really need the salt to taste amazing. This recipe has less than 350 mg per serving of sodium, but if you want to, you can reduce the salt you add to 1/4 of a teaspoon to make this recipe even lower in sodium.

    Fresh chives: This really adds a fresh herb and onion flavor that you can’t substitute.

    Substitutions

    Yellow potatoes: Feel free to use any type of potatoes that you’d like for this recipe. Red potatoes, russet potatoes, Yukon gold potatoes, and baby potatoes all work great in this recipe and don’t require peeling.

    Whole milk: You can use any dairy or dairy-free milk in this recipe that you’d like to. Just make sure to use a plain variety so you don’t add any flavor or sugar to your Boursin mashed potatoes. Oat milk, almond milk, soy milk, rice milk, 2%, half n half, and heavy cream are all options!

    Fresh chives: If you aren’t a big fan of chives, you can substitute in fresh rosemary instead! Or, if you don’t have fresh chives on hand, you can add 2 tsp of dry chives in its place.

    Instructions

    • Yellow potatoes being diced.
    • Cooked potatoes ready to be whipped.
    • Boursin cheese, salt, and milk being added to the potatoes.
    • The whipped Boursin potatoes being topped with fresh chives.
    • Boursin garlic mashed potatoes on a serving spoon.
    1. Chop your potatoes into 1 inch pieces, no need to peel!
    2. Add your potatoes to boiling water, and boil for about 15 minutes or until fork tender.
    3. Drain your cooked potatoes, and tranfer to a large bowl. Add the Boursin cheese, whole milk, and sea salt to the bowl. Use an electric mixer to beat the potatoes until smooth.
    4. Gently stir in your fresh chives.
    5. Serve mashed potatoes hot or save in the fridge for a day or two later.

    Tips & FAQ

    Can I make Boursin mashed potatoes ahead of time?

    Yes! These mashed potatoes can be made up to 2 days ahead of time and can be reheated on low for about 4 hours in the slow cooker or in about 10 minutes over medium heat on the stovetop!
    Just make sure that whichever reheat method you choose, that you stir them occasionally to evenly disperse the heat and avoid drying them out.

    What else goes with Boursin cheese?

    Crackers, dried fruits, toasted bread, meats, wine, and more cheese go great with Boursin cheese! Boursin cheese makes a great addition to any cheap charcuterie board, too!

    Nutritional Info

    This mashed potato recipe is simple, quick, and completely butter-free! One thing that makes this recipe healthy is that it is low in sodium and calories compared to other mashed potato recipes.

    The carbs are still fairly high for a side dish, but potatoes are naturally high in starches and carbohydrates. Overall, this recipe is made with simple, whole-food ingredients and the entire family will love it!

    • Sodium: 327 mg
    • Carbohydrates: 36 grams

    • 5.2 oz Boursin cheese: $2.98
    • 1/2 cup whole milk: $0.12
    • 1 tbsp fresh chives: $0.25
    • 1/2 tsp sea salt: $0.02

    The total to make this recipe comes out to be $4.58 or roughly $0.76 per serving of Boursin mashed potatoes.
