    This is what I make when the zucchini pile on my counter is getting out of hand and I want something crunchy that isn’t a bag of potato chips.

    Zucchini chips sound simple in theory, but most baked zucchini chips I’ve tried end up chewy or soggy instead of actually crispy. The problem almost always comes down to moisture — zucchini holds a lot of water, and if you don’t get rid of it before baking, no amount of oven time will fix a soggy chip.

    That’s why this recipe presses the sliced zucchini between paper towels before it ever goes in the oven, then bakes low and slow so the moisture has time to evaporate instead of steaming the chips from the inside out. It takes patience, but it’s the difference between a chip that shatters when you bite it and one that just goes limp.

    • Oil spray swap: any neutral oil spray works in place of avocado oil.
    • No mandoline? a sharp knife works too — just aim for slices as thin and even as you can manage, since uniform thickness is what helps them crisp evenly.

    How to Make Crispy Parmesan Zucchini Chips

    • Step 1 – Get your oven preheating to 250°F — low and slow is the key to this recipe.
    • Step 2 – Slice the zucchini into thin, even rounds using a mandoline slicer, and arrange them in a single layer on a paper towel-lined baking sheet.
    • Step 3 – Lay more paper towels on top, then press down firmly with a second baking sheet to squeeze out as much moisture as possible.
    • Step 4 – Move the pressed zucchini rounds to a parchment-lined baking sheet in a single layer, mist them with avocado oil spray, and slide them into the oven for 90 minutes.
    • Step 5 – Pull the pan out and sprinkle the parmesan, salt, garlic powder, and smoked paprika evenly over the top. Return to the oven for another 10 minutes.
    • Step 6 – Check the chips — pull off any that are golden and crisp, and let the rest keep baking in 10-minute increments, checking each time, until every chip is done.
    • Step 7 – Let them cool completely before serving — they’ll crisp up even more as they sit.

    Recipe Success Tips

    • Slice uniformly thin: uneven slices bake unevenly — some will burn while others stay soft. A mandoline makes this much easier than a knife.
    • Choose wider zucchini: the rounds shrink quite a bit as the moisture cooks out, so wider zucchini give you a more substantial chip once they’re done.
    • Don’t skip the moisture press: this is the single biggest factor in getting genuinely crispy chips instead of soggy ones.
    • Don’t overcrowd the pan: give each round a little breathing room so air can circulate and moisture can escape.
    • Be patient with the low, slow bake: a hotter, faster bake might seem tempting, but it tends to brown the outside before the moisture fully cooks out.
    • Pull chips individually as they finish: not all the chips will be done at the same time, so remove the crispy ones and let the rest keep going.

    Store cooled chips in an airtight container at room temperature for up to 2 days — this keeps them crispiest. The refrigerator introduces moisture that can soften them, so it’s best to skip it here. If they do lose some crispness, a few minutes back in a low oven can help revive them.

    Equipment

    • 1 mandoline slicer
    • 1 large baking sheet

    Ingredients

    • 3 medium zucchini sliced into ⅛ inch rounds
    • avocado oil spray
    • 2 tbsp grated Parmesan cheese
    • 1 tsp kosher salt
    • 1 tsp garlic powder
    • ½ tsp smoked paprika

    Instructions

    • Preheat your oven to 250℉.
    • Carefully using a mandoline slicer, slice the zucchini into ⅛ inch rounds (about 4mm). Place them in an even layer on a baking sheet lined with paper towels.
    • Cover with more paper towels, and use another baking sheet to press down firmly on them to squeeze out moisture.
    • Transfer the squeezed zucchini rounds to a large parchment-lined baking sheet, making sure they are in a single layer. Spray with avocado oil spray evenly, the place in the oven for 90 minutes.
    • After 90 minutes of baking, remove from oven and sprinkle evenly with the parmesan cheese, salt, garlic powder, and smoked paprika. Return to the oven for 10 minutes.
    • After 10 minutes, check the zucchini. Remove any zucchini chips from the baking sheet that are golden and crispy (not all will be done). Return the zucchini chips to the oven for 10 more minutes.
    • Repeat step 6, checking every 10 minutes, until all the zucchini chips are done.
    • Allow to cool, then serve!
