Blend until smooth. Blitz or blend the strawberry mixture until smooth and spoonable, or for about 30 seconds to 1 minute. If you prefer a chunkier vinaigrette, blend the dressing as written and pour it into a container. Pulse 1/2 cup strawberries until finely chopped. Stir the chopped berries into the dressing and serve.
Season to taste. If needed, add an extra pinch or two of salt or a few extra cracks of pepper. To make the homemade strawberry vinaigrette less tart, blend in more honey. To enhance the tang or reduce the sweetness, add extra vinegar by the teaspoon.
