These Homemade Chocolate Peanut Butter Protein Bars layer a peanut butter and protein powder base with melted chocolate, no baking required, for 11g of protein per bar.
Line an 8x8 baking pan with parchment paper and set aside.
In a mixing bowl, stir together your heat-treated oat flour, protein powder, and salt until combined (see notes for heat-treating flour).
Add the peanut butter, maple syrup, and melted coconut oil and stir until a ball of dough forms. If the batter is too dry, add 1 tbsp of water at a time until it reaches play-doh like consistency.
Press the peanut butter dough into the prepared baking pan, all the way to the edges to form an even, flat layer. Set aside.
In a microwave-safe bowl, melt your chocolate chips until smooth, 30 seconds at a time, stirring between each session in the microwave. Pour the chocolate over the peanut butter dough and smooth it out with a spatula until it forms an even layer.
Place the pan in the fridge for at least 1 hour, then remove the protein bars from the pan and slice into 10 bars. Store in the fridge for up to 5 days, or freeze for up to 3 months.

To heat treat your oat flour, preheat your oven to 300 degrees and line a baking sheet with parchment. Spread the oat flour on the parchment, and bake for 20 minutes or until the flour reaches a temperature of 160 degrees, tossing halfway through. Allow to cool, then make your protein bars!
