Completely thaw your turkey breast in the fridge. This can take up to 3 days.
Preheat oven to 450℉ and grease a roasting pan with cooking spray.
Place the thawed turkey breast on the roasting pan (if the turkey has netting, leave it on). Pat the turkey breast dry with paper towels, then brush with the melted oil on all sides.
In a small bowl, stir together the rosemary, garlic powder, thyme, smoked paprika, salt, and sage. Sprinkle the seasoning all over the turkey breast.
Spray the turkey with cooking oil (this will help prevent the herbs from burning), and place in the preheated oven for 20 minutes.
After 20 minutes, loosely cover the turkey breast with aluminum foil, and turn the oven temperature down to 400℉. Continue to bake for another 60-70 minutes, or until the turkey's center reads 165℉. Make sure to check the turkey's temperature in multiple places to be sure it is done.
Remove the turkey from the oven and allow to rest for at least 15 minutes. Slice and serve!
