In a large mixing bowl, whisk together the almond milk, sugar, oil, orange juice, egg, and vanilla until smooth.
Stir in the flour, baking powder, 1 tsp cinnamon, and salt until almost mixed.
Add the chopped rhubarb and stir until well combined.
Transfer the batter into the prepared loaf pan, then sprinkle with the cinnamon sugar mix. Bake in the preheated oven for 65-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool completely, then slice and serve!
