Carne Asada

Quesadillas

What you'll need: Flank steak, paprika, cumin, chili powder, onion powder, garlic powder, pepper, orange juice, lime juice, beer, oil, onion, bell peppers, corn tortialls, salsa, and cheese!

In a small bowl, combine all the carne asada seasonings and sprinkle them over the beef in the slow cooker.

 Pour the juices, seasonings, and beer over the meat, and cook on low for 6 hours.

After 6 hours, remove the beef from the slow cooker and shred it!

Saute the onion and bell peppers until softened.

Assemble your quesadillas! Spread salsa onto a tortilla, and place it salsa-side up in a skillet. Sprinkle cheese, peppers and onions, and carne asada meat onto the tortilla. Then more cheese, and another tortilla.

Cook on low until it’s golden and crispy, then carefully flip it, and cook 1-2 minutes on the second side. Remove from the skillet, and allow to cool slightly before cutting.

Done! Top with guacamole and fresh cilantro if desired!
