In a microwave-safe bowl, heat the flour for 60-90 seconds on high in the microwave. Stir, then heat for another 30 seconds, until temp reaches 165°. Place in a large mixing bowl.
Add the protein powder (and cocoa powder if using), and stir to combine.
Add the maple syrup, melted coconut oil, 2 tbsp milk of choice, and vanilla extract and stir. If the mixture is a little dry, add another 1-2 tbsp of milk and stir.
Fold in either mini chocolate chips or rainbow sprinkles (if using), until evenly distributed. Store in the fridge for 4-5 days. **Note: it will harden in the fridge, so allow for it to come to room temperature before you're ready to eat it. You can also individually portion it before storing in the fridge!
