Stir in eggs, vanilla, plain Greek yogurt, organic cane sugar, baking powder, and baking soda. Mix until well combined.
Add the whole wheat pastry flour and mix until just combined, try not to overmix.
Fold in chopped strawberries.
Pour batter into a greased bread pan and top with sliced, fresh strawberries if desired. Bake in preheated oven for 70-75 minutes, until a toothpick inserted in the middle comes out clean with no crumbs or batter.
After baking, allow to cool, then slice and serve!
