Ingredients
1cupunsweetened cocoa powder
1 ½cupscoconut sugar
2tspbaking powder
½cupavocado oil
2largeeggs
2tspvanilla extract
1cupwhole wheat pastry flour
organic powdered sugar or unsweetened coconut shredsfor rolling
Instructions
Preheat oven to 350°. Combine the cocoa powder, coconut sugar, oil, eggs, vanilla, and baking powder in a large mixing bowl. Mix until there are no clumps of coconut sugar left and everything is smooth.
Stir in the whole wheat pastry flour until just combined, don't overmix!
Roll dough into 1.5 inch balls and roll in organic powdered sugar (or unsweetened coconut shreds). Place on a lined baking sheet 2 inches apart, and flatten slightly.
Bake in a preheated oven for 9-10 minutes. Allow to cool, then serve!
