Carne asada quesadillas is the easiest dinner recipe! With added bell peppers & onions, slow-cooked beef, & cheese, this quesadilla is sure to be a hit!

Ingredients
For the Carne Asada:
1 lbflank steak
1tsppaprika
1tspcumin
2tsp chili powder
1tsp onion powder
2tspgarlic powder
½tspblack pepper
¼cuporange juice
¼cuplime juice
½cupbeer(I use Corona Light)
For The Quesadillas:
1tbspavocado oil
1yellow onionsliced fajita style
1red bell peppersliced fajita style
1green bell peppersliced fajita style
8mediumcorn tortillas
½cupsalsa
2cupsshredded cheese of choice
Instructions
Place the flank steak in your slow cooker. In a small bowl, combine all the carne asada seasonings and sprinkle them over the beef in the slow cooker. Pour the juices and beer over the meat, and cook on low for 6 hours.
After 6 hours, remove the beef from the slow cooker and shred. Set aside.
In a skillet, heat the oil on medium heat. Add the sliced onions and bell peppers, and saute for 5-6 minutes, until softened. Set aside.
Spray a separate skillet with cooking spray, and heat on medium-low. Spread about 2 tablespoons of salsa onto a tortilla, and place it salsa-side up in the greased skillet. Sprinkle about 1/4 cup of cheese onto the salsa, then 1/4 cup of the carne asada meat, and 1/4 cup of the peppers and onions. Sprinkle 1/4 cup more cheese on top of the peppers and onions, then place another tortilla on top, to complete your quesadilla.
Let the quesadilla cook until golden and crispy on the bottom, about 4-5 minutes (see notes if using flour tortillas). Don't mess with it before it gets a little crispy, or it will tear/fall apart! Once it's golden and crispy, spray the uncooked tortilla with cookign spray, carefully flip it, and cook 4-5 minutes on the second side.
Remove from the skillet, and allow to cool slightly before cutting. Cut it into 4 pieces, and serve with guacamole and fresh cilantro!

If using flour tortillas, cook on medium-low for 1-2 minutes, until golden brown. If you cook flour tortillas on medium heat, they will likely burn before the cheese melts.
