Ingredients
4 ½cupscooked black beansor 3 cans drained and rinsed
3mediumsweet potatopeeled and diced in ½ inch cubes
1cupdry rolled oats
6cupsfresh spinach
⅓cupnutritional yeast
3tbspalmond butter
⅓cup ground flax
2tbspgarlic powder
1tbsponion powder
2tbspdry sage
1tbspchili powder
3tbspcoconut aminos
Instructions
Preheat oven to 350°. On a lined baking sheet, spread black beans in an even layer. Set aside. On a separate, lined (and slightly greased) baking sheet, spread diced sweet potatoes in an even layer.
Place the black beans and the sweet potatoes on the center-most racks in the oven at the same time. Roast both for 20 minutes.
After 20 minutes, pull the black beans out of the oven and allow to cool slightly. Continue to roast the sweet potatoes for another 5 minutes, then allow to cool slightly.
Turn the oven up to 375°. Place the black beans and the oats in a food processor. Pulse 3-4 times until the black beans are cut into thirds. Empty into a large mixing bowl.
Place the sweet potatoes and spinach in the food processor. Pulse until the spinach is cut into small pieces and the sweet potatoes are minced. Empty into the large mixing bowl with the black bean mixture.
Add remaining ingredients to the large bowl and mix until well combined. I usually use my hands for this part, it's much easier to get everything evenly distributed!
Form 12-14 patties that are about ½ inch thick. Place on a GREASED baking pan (I just use the same pan I used for the sweet potatoes) and roast at 375° for 20 minutes, flipping halfway through.
Use within 5 days if stored in the fridge, or up to 3 months in the freezer.
To Freeze:
After following all instructions, place black bean burgers in a freezer-safe, airtight container and freeze for up to 3 months. I like to cut up squares of parchment to put in between the patties so they don't stick together.
To heat, simply take a frozen patty and saute on medium or grill for 5-6 minutes, flipping halfway. Or, microwave from frozen for 1 minute.
