In a medium bowl, mix together cottage cheese, parmesan cheese, 1 cup of mozzarella cheese, egg, pepper, and fresh basil. Set asidehe pesto side with mozzarella cheese, then sliced turkey, then arugula.
Add another layer of zucchini, then meat sauce, then cottage cheese mixture. Add the last zucchini layer, then sprinkle the remaining 1 cup of mozzarella cheese on top.
