What you'll need:  - quinoa - broth - bell peppers - salsa - cheddar cheese - cumin - chili powder - onion powder - garlic powder - black beans - corn

Cook your quinoa in the broth and set aside.

Mix together remaining ingredients in a large bowl.

Stir in the cooked quinoa.

Cut bell peppers and remove seeds.

Stuff bell peppers with quinoa mixture, top with a little extra cheese and set inside an oven-safe baking dish.
