Gluten Free Peanut Butter Cookies

What you'll need: Almond flour, peanut butter, egg, coconut sugar, baking soda, baking powder, vanilla, unsalted butter, and coarse sugar for sprinkling (optional).

Beat together softened butter, coconut sugar, and vanilla until fluffy and well combined.

Add egg and peanut butter and beat until well combined.

Add almond flour, baking soda, and baking powder, and mix until well combined.

Form into 1.5 inch balls of dough, and place on a lined cookie sheet.

Using a fork, press each cookie down slightly, then press again the opposite way to create the criss-cross pattern.

Bake at 350 degrees for 10 minutes, cool, and sprinkle with coarse sugar if desired!
