Baked Meatballs w/Chimichurri

For the meatballs: ground beef, onion, eggs, breadcrumbs, tomato paste, parmesan, garlic powder, sage, papric, and dried basil.

For the sauce: cilantro, parsley, onion, garlic, salt, red wine vinegar, lemon juice, oregano, chili flakes, and avocado oil.

Combine all meatball ingredients in a large bowl, mixing with gloved hands if needed.

Form 1.5 inch meatballs (about 36 meatballs total) and place on a lined baking sheet then bake for 30 minutes.

Meanwhile, make the chimichurri sauce. In a food processor, add all of the chimichurri sauce ingredients except the olive oil. Pulse until all ingredients are chopped finely and combined.

Add olive oil to the food processor and pulse 2-3 times until mixed well.

Done! Dip meatballs in the sauce or smother them in it!
